Their recipe:
6 Scotch Bonnets
3 teaspoons allspice
3 teaspoons thyme
One pinch nutmeg
2 bunches chopped scallions
1/2 pound finely chopped ginger
36 cloves garlic finely chopped
Salt to taste
3 teaspoons cinnamon
2 teaspoons black pepper
2 cups mushroom soy sauce
1 cup rice vinegar
1 cup sugar
Mix all ingredients together in a food processor. Sauce
should be like a thin batter. Marinate fish or meat
several hours before serving.
