HONDURAN CEVICHI

WORLD EXPLORER CRUISES
The Universe Explorer of World Explorer Cruises travels through Latin America and features its unique cuisine. This region of the world frequently cooks with a mixture of Europe and Africa cuisine plus significant contributions of indigenous Indian cooking.

Their recipe:
1 jalepeno chili, chopped with seeds
2 tbs chopped gingerroot
3 tbs soy sauce
1 tbs sugar
1/2 cup freshly squeezed lime juice
1 can (14 oz) unsweetened coconut milk
1 1/2 lbs fresh tuna, cut into ¼ inch dices
1 1/2 red onions, thinly sliced into half moons
1/4 shaved coconut
2 tbs sliced green onions
1 tbs finely chopped chives
3 tbs finely chopped fresh cilantro leaves
Garnish:
1/2 cup seeded and diced red bell pepper
2 cups shaved coconut
4 coconuts cut in half
Place the jalepeno, gingerroot, soy sauce, sugar, lime juice, and coconut milk in a blender and puree until smooth. When you are ready to serve, toss with the tuna. At the last minute sprinkle with the onion, shaved coconut, green onions, chives, and cilantro. Place mixture in the coconut halves and garnish with bell pepper and coconut.

Yield: 8 servings.
