GRILLED BARBECUED SHRIMP ALA CHEF PAT

ANYTIME CRUISES
Captain Jim Chen sends this quick and easy recipe from Chef Pat Abe of Outasite, a little six-passenger boat of Anytime Cruises that goes from Seattle to Juneau in May, then does five-night cruises all summer from Juneau Mondays to Saturdays.pe.

Their recipe:
1 lb. (16-20) cooked, peeled & deveined shrimp
1/4 lb. Thin sliced prosciutto ham.
1 purple onion, quartered
Barbecue sauce (your favorite brand)
Bamboo skewers

Soak skewers in warm water for 1 hour. Wrap shrimp and piece of onion with ham. Put on skewers and broil over charcoal or gas grill for a couple of minutes. Dip in barbecue sauce and grill for another minute. Dip again and serve. Any white firm flesh fish may be substituted for shrimp. Albacore or halibut are especially good substitutes.
