LINGUINE WITH LOBSTER SAUCE

Cunard, Seabourn, Holland America, Costa, and Carnival
Cruise Lines. Each chef demonstrates their favorite
recipes and provides helpful cooking tips in the video.

Linguine
2 1/4 pounds of flour
8 eggs
Salt to taste
Sift the floor into a pyramid. Slowly add eggs and salt
until blended; smooth dough. Wrap dough in plastic film
and let stand for 30 minutes. Roll the dough out with
a rolling pin to make a fine sheet of pastry. Sprinkle
with flour as you roll. Cut dough into narrow, 9-inch
strips. Spread linguine and let dry.
Lobster Sauce
12 ounces lobster meat cut into small pieces
2 garlic cloves, peeled and finely chopped
1 tablespoon virgin olive oil
1 1/2 cups dry white wine
1 cup tomato sauce
1/2 cup parsley finely chopped
1/2 ounce brandy
Sauté the lobster meat in very hot olive oil.
Add garlic. Stir for about 2 minutes. Flame with brandy.
Add white wine. Cook 3-4 minutes. Remove lobster meat
and hold in a warm place. Add tomato sauce and white
wine and reduce to a smooth texture. Season to taste
with salt and pepper.
