ALASKAN ROCKFISH WITH TOMATO ONION RELISH
AMERICAN SAFARI CRUISES
American Safari Cruises has two small yachts, the Safari
Spirit and Safari Quest. They travel through Alaska
with destinations to Prince Rupert to Juneau; exploring
isolated coves, small fishing villages, beachcombing,
watching for whales and other wildlife, fishing for
salmon and halibut, taking kayaks or zodiacs into shore
landings, and exploring the faces of glaciers.
Their recipe:
Relish:
1 tomato, seeded and diced
4 tablespoons of the white part of a green onion sliced
into 1/8-inch slices
1/2 teaspoon minced garlic
1/4 Jalapeno pepper seeded and minced
1 tablespoon fresh lemon juice
1 tablespoon fresh lime juice
1/4 teaspoon oregano leaves, crushed
Dash of Tabasco
Mix relish ingredients together and refrigerate for
at least 2 hours.
Hot Pepper Oil:
2 tablespoons olive oil
1/4 teaspoon crushed red peppers
1 teaspoon garlic
Pinch of kosher salt
Heat olive oil with peppers until oil is just warm,
add salt and garlic, and hold until needed.
Fish:
2 7 oz. Rockfish fillets
Preheat broiler until extremely hot. Dip fillets in
oil allowing the excess to drain off. Cook quickly and
baste with oil to prevent the fish from sticking to
the grill. Transfer to plate and top with relish.
Recommended wine: Serve with a Fume Blanc such as the
1998 Benziger from Sonoma County.
Yield: Serves two.
