VEAL
SALTIMBOCCA
AMERICAN EAGLE
The 49-passenger American Eagle cruises along the Georgia
and Florida borders and up the St. Johns River..
Their recipe:
8 oz veal, pounded
2 oz flour
4 oz spinach
1 oz garlic, chopped fine
1 oz shallots, chopped fine
3 oz red wine
4 oz demi-glace
2 oz Parma proscuitto
2 oz sharp provolone
1 oz olive oil
1 fluted mushroom
Press the proscuitto into veal, dredge in flour, and
sauté in hot olive oil. Remove from pan and deglaze
with red wine; add garlic and shallots, and reduce.
Place the provolone on the veal and put into oven for
5 minutes at 350 degrees. Serve over a bed of steamed
spinach and top with a fluted mushroom.
