GRILLED
FLANK STEAK WITH CHIMICHURRI
WORLD EXPLORER CRUISES
The Universe Explorer of World Explorer Cruises travels
through Latin America and features its unique cuisine.
This region of the world frequently cooks with a mixture
of Europe and Africa cuisine plus significant contributions
of indigenous Indian cooking.
Their recipe:
2 flank steaks, cleaned
1/4 cup olive oil
3 tbs cilantro, chopped
2 tbs garlic, minced
2 tbs white vinegar
1 tbs chili powder
1 tbs salt
2 tsp black pepper
Combine all ingredients and marinate flank steak 4 hours
in advance. Grill flank steak over hot coals or flame,
cooking both sides approximately 10 minutes per side
to desired doneness. Let stand 5 minutes before cutting.
Slice across grain into thin slices. Pour chimichurri
over top of meat.
Chimichurri:
6 garlic cloves
3 bay leaves
2 jalepenos, stems removed
1/2 cup cilantro, roughly chopped
1/2 cup parsley, roughly chopped
1/4 cup oregano, roughly chopped
1/4 cup white vinegar
1/3 cup olive oil
Combine garlic and herbs in food processor with olive,
just until herbs are minced. Add vinegar. Process to
combine well. Pour over top of the flank steak.
Yield: 6 portions.
