BREAD
PUDDING
THE WIND STAR CRUISES
The 308-passenger Wind Surf of the Wind Star cruise
line sails from the Caribbean to the Riviera where she
cruises from Rome, Venice, or Nice around the boot of
Italy. The Wind Star cruise line is famous for its bread
pudding, a frequent request of its passengers.
Their recipe:
1/2 loaf white bread, cubed
9 oz. sugar
3 1/2 oz melted butter
9 whole eggs, beaten
1 quart milk
1/2 teaspoon cinnamon
1/4 cup raisins
VANILLA SAUCE
1/2 quart milk
1/2 quart heavy cream
8 ounces sugar
9 egg yolks
pinch of salt
fresh vanilla beans or vanilla extract to taste
Mix the bread cubes with the melted butter and raisins
and place into a casserole dish. Blend the eggs, sugar,
cinnamon, milk, and a touch of vanilla; pour the mixture
over the bread. Place the casserole into a bain marie
and bake in a 350 degree oven until firm (about 1 hour).
For the vanilla sauce, combine the cream, half of the
sugar and the vanilla bean in a pot and heat to a boil.
Blend the remaining sugar with the egg yolks until smooth.
Temper this mixture with the heated cream-sugar mixture,
return the tempered egg yolks to the cream mixture.
Cook the sauce over low heat, stirring constantly, until
it reaches nappe (lightly coats the back of a spoon).
Strain the sauce through a chinoise (strainer). If serving
warm, reserve in a warm spot until used, otherwise cool
in an ice bath and place in the refrigerator. (Do not
reheat the sauce.)
Yield: Serves: 10 (unless you go back and have seconds
like we usually did).
