PEA SOUP
THE NOORDAM
The Noordam galley staff of nearly 100 prepares 5,000
meals per day. Here is a recipe for one of the favorite
dishes frequently cited by passengers.
Their recipe:
Pork knuckles 2
Smoked sausage 1 lb
Whole green peas 1 lb
Split peas 1 lb
Water 4 quarts
Leeks 4 pieces
Celery root 1 piece
Celery leaf 1 bunch
Potatoes 2
Yellow onion 4 pieces
Salt and pepper To taste
Wash the whole green peas well and leave them overnight
in the water. Add the split peas and pork knuckles the
next day and cook for about one and a half hours. Take
the pork knuckles out, take meat off bones and cut into
pieces. Add sausage to peas, take out in 15 minutes
and also cut into pieces. Clean vegetables, cut into
pieces, add and cook for about 20 minutes.
Yield: Serves 12.
